Winemaking

The bunches are harvested at the end of the night to keep all their freshness. The grapes are destemmed and then crushed; this is followed by a long static draining phase which allows 75% of its juice to be slowly extracted, before gentle pressing.
Rolle and Grenache Blanc undergo slow fermentation at 17°C (around 12 days) on a clear must.
The Roussane is cold-settling, then stabilized on its lees for 5 days at 7°C. Fermentation takes place in stainless steel vats before being transferred to new barrels where fermentation continues at 19°C. The wine is finally regularly stirred for 15 days, without adding sulfur.

Tasting

With a very pale gray gold color, this wine stands out at first glance.
Its expressive nose reveals a harmonious blend of white-fleshed fruits and fresh spices, while very light toasted notes stand out, with a captivating subtlety.
On the palate, the breadth and fullness are revealed, giving way to a beautiful freshness that makes this wine ideal to be enjoyed outside of meals. The finish lingers pleasantly, offering a resolute freshness, nuances of delicate white fruits and discreet toasted notes that blend subtly.
This blend promises exceptional tasting moments and will elegantly accompany special moments.
We recommend a serving temperature of 14-15°C.
